    Slice the pork belly into 3cm-wide pieces. Roughly chop the cabbage, and thinly slice the onion. Slightly open one corner of the yakisoba noodle packets and heat them in a microwave (600W) for 1 minute to make them easier to loosen.

    Advice: Heating the noodles in the microwave makes them easier to loosen when stir-frying and prevents stickiness.

    Heat 1 tablespoon of vegetable oil (for stir-frying ingredients) in a frying pan over medium heat, then stir-fry the thinly sliced pork belly. Stir-fry for about 3 minutes until the meat changes color and becomes slightly crispy.

    Advice: Stir-frying the pork thoroughly to render out its fat will spread the umami throughout the dish. A slightly crispy texture is recommended.

    Push the pork to one side of the frying pan, add the onion and cabbage to the empty space, and stir-fry. Stir-fry for about 2 minutes until the onion softens and the cabbage becomes slightly translucent.

    Advice: If you want to keep the vegetables crunchy, stir-fry them for a shorter time; if you prefer them softer, stir-fry longer.

    Spread the ingredients evenly in the frying pan, add the microwaved yakisoba noodles, and drizzle in 1 tablespoon of vegetable oil (for loosening noodles). Stir-fry for about 1 minute, using cooking chopsticks to loosen the noodles and mix them well with the ingredients. Add 2 tablespoons of water, cover with a lid, and steam-fry over medium heat for 30 seconds.

    Advice: Adding water and steam-frying makes the noodles chewy and helps the sauce cling better.

    Remove the lid, pour in the homemade sauce (a mixture of 2 tablespoons soy sauce, 2 tablespoons Worcestershire sauce, 1 tablespoon oyster sauce (if available), and 1 teaspoon sugar), and stir-fry over high heat for about 1 minute, tossing to coat everything evenly. Taste and adjust the sweetness or saltiness to your preference.

    Advice: Don't add all the sauce at once; adjust it by tasting to avoid mistakes. Stir-frying over high heat enhances the aroma.
