    Thinly slice the onion into 5mm strips. Cut the beef belly into bite-sized pieces.

    Advice : Cutting the onion along the fiber prevents it from falling apart too much and leaves a nice texture.

    In a small pot, add water, soy sauce, mirin, sake, sugar, dashi granules, and grated ginger. Bring to a boil over medium heat.

    Advice : Boiling the sauce evaporates the alcohol from the sake and mirin, making the flavor more rounded and mellow.

    Soy sauce 2 tbsp
    Mirin 2 tbsp
    Sake 1 tbsp
    Sugar 1 tbsp
    Japanese dashi granules 1/2 tsp
    Grated ginger 2cm

    Add the onion to the boiling sauce, cover with a lid, and simmer over medium-low heat for 5 minutes.

    Advice : Simmering the onion first allows it to absorb the flavor without overcooking and toughening the beef.

    Add the beef and simmer for another 3 minutes, skimming off any foam (scum) from the surface.

    Advice : Rather than dumping all the beef at once, spread the slices out as you add them so they cook evenly.

    Fill bowls with warm rice, top with the beef and onions, and pour over plenty of the sauce. Garnish with red pickled ginger if desired.

    Advice : Try adding a raw egg or shichimi togarashi for extra flavor. Personally, I love adding extra sauce!
