    Lightly crush the green part of the long green onion and slice the ginger thinly. Prepare your favorite toppings such as boiled eggs, chopped green onions, and toasted nori seaweed.

    Advice: Lightly crushing or thinly slicing the long green onion and ginger will help bring out their aroma. Preparing toppings in advance will ensure smooth plating.

    In a pot, combine 800ml of water, 8g of chicken stock powder (for soup), 1 green part of long green onion, and 2 slices of ginger. Bring to a boil over high heat. Skim off any scum, then reduce heat to low and simmer for 5 minutes.

    Advice: Carefully removing the scum will make the soup clearer and give it a more refined taste. Over-simmering can cause the aroma to dissipate, so aim for about 5 minutes.

    While the soup is simmering, prepare the tare (sauce). In a bowl, combine 6ml of sesame oil, 30ml of soy sauce (for sauce), 15ml of mirin, 15ml of sake, 1g of sugar, and 1g of chicken stock powder (for sauce). Mix well. Divide this mixture into two serving bowls.

    Advice: The aroma of the tare will be enhanced when mixed with the hot soup. Mixing it well and warming the bowls will make it even more delicious.

    Remove the long green onion and ginger from the simmered soup. Pour 400ml of the hot soup into each of the bowls containing the tare. Add your favorite noodles (not included in this recipe) and top with the prepared boiled eggs, chopped green onions, toasted nori seaweed, and any other desired toppings. It's done!

    Advice: Pouring hot soup will instantly bring out the aroma of the tare. Cook the noodles according to package directions and add them just before combining with the soup.
