Cooking Steps

  1. 1

Cut the chives into 3cm lengths, and julienne the carrot and onion.

Advice: Aligning the size of the vegetables ensures even cooking and a beautiful appearance.

    Ingredients
    Chives 100g
    Carrot 75g
    Onion 50g
  2. 2

In a bowl, combine all-purpose flour, potato starch, egg, water, chicken stock powder, and salt. Whisk well until there are no lumps.

Advice: Gradually add the dry ingredients while mixing to prevent lumps. Aim for a smooth batter.

    Ingredients
    All-purpose flour 100g
    Potato starch 20g
    Egg 1piece
    Water 150ml
    Chicken stock powder 2g
    Salt 1g
  3. 3

Add the vegetables cut in Step 1 to the batter from Step 2, and mix until uniformly combined.

Advice: Ensure the batter thoroughly coats all vegetables to help them stick together when frying.

  4. 4

Heat half the sesame oil (7.5ml) in a frying pan over medium heat.

Advice: Adding the batter to a sufficiently heated pan prevents sticking and results in a crispy exterior.

    Ingredients
    Sesame oil 7.5ml
  5. 5

Pour half of the batter from Step 3 into the frying pan, shape it into a round, and fry one side over medium heat for 3 minutes.

Advice: Once the batter is spread, avoid moving it much until it browns to get a crispy finish.

    Fry one side 3 sec
  6. 6

Once one side is browned, flip it over, press lightly with a spatula, and fry for another 3 minutes. Cook the remaining batter in the same way.

Advice: Pressing lightly with a spatula ensures even cooking throughout and a crispy texture.

Fry the other side 3 sec
  7. 7

While the Jeon is frying, make the dipping sauce. In a separate bowl, combine soy sauce, vinegar, sugar, white sesame seeds, and chili oil. Mix well until the sugar dissolves.

Advice: For extra flavor, you can add a small amount of minced garlic or ginger to the sauce, if desired.

    Ingredients
    Soy sauce 30ml
    Vinegar 15ml
    Sugar 5g
    White sesame seeds 3g
    Chili oil 2ml
  8. 8

Cut the cooked Jeon into easy-to-eat pieces, serve with the special sauce, and enjoy!

Advice: It's best enjoyed hot and fresh from the pan! Dip generously in the sauce.
