Cooking Steps

  1. 1

In a bowl, mix the soy sauce, mirin, sake, and grated ginger well to make the sauce mixture.

Advice : If the alcohol in the sake and mirin bothers you, microwave the mixture at 600W for about 30 seconds before mixing to make the flavor milder.

    Ingredients
    Soy sauce 2 tbsp
    Mirin 1 tbsp
    Sake 1 tbsp
    Grated ginger 5g
  2. 2

Slice the albacore tuna into 1cm thick diagonal slices.

Advice : Use a long pulling motion towards you to slice cleanly without breaking the flesh. It's also easier if the fish is slightly semi-frozen.

    Ingredients
    Albacore tuna (block) 150g
  3. 3

Heat the vegetable oil in a frying pan over medium heat and arrange the sliced tuna. Cook thoroughly until both sides turn white.

Advice : Avoid high heat as it can make the fish tough; fry carefully over medium heat until it turns white. Ensuring it is cooked to the center is key for safety.

    Ingredients
    Albacore tuna (block) 150g
    Vegetable oil 5ml
  4. 4

Pour the sauce made in step 1 into the frying pan and simmer slightly while tossing with the tuna.

Advice : Lower the heat when adding the sauce to prevent burning and to coat everything evenly. It's ready when it looks glossy.

    Ingredients
    Soy sauce 2 tbsp
    Mirin 1 tbsp
    Sake 1 tbsp
    Grated ginger 5g
  5. 5

Serve the rice in a bowl and arrange the glazed tuna on top. Sprinkle with white toasted sesame seeds and chopped green onions to finish.

Advice : Adding a bit of mayonnaise as a topping goes great with the teriyaki flavor. I also recommend a dash of shichimi chili pepper for an extra kick.

    Ingredients
    Warm rice 200g
    White toasted sesame seeds 3g
    Chopped green onions 10g
