Advice : If the alcohol in the sake and mirin bothers you, microwave the mixture at 600W for about 30 seconds before mixing to make the flavor milder.

Slice the albacore tuna into 1cm thick diagonal slices.
Advice : Use a long pulling motion towards you to slice cleanly without breaking the flesh. It's also easier if the fish is slightly semi-frozen.

Heat the vegetable oil in a frying pan over medium heat and arrange the sliced tuna. Cook thoroughly until both sides turn white.
Advice : Avoid high heat as it can make the fish tough; fry carefully over medium heat until it turns white. Ensuring it is cooked to the center is key for safety.
